Long before opening their bakery, Paul and Monique built extraordinary careers in some of the world's most respected kitchens. French-born Paul trained under legendary chefs including Yannick Alléno and Alain Ducasse, worked at the three Michelin-starred Le Meurice and Le Louis XV, and later served as coach of Team USA for the prestigious Bocuse d'Or competition. Monique, a Filipino American chef and Top Chef Season 19 alum, developed her craft in acclaimed Michelin-starred restaurants including Geranium in Copenhagen, Pavillon Ledoyen in Paris, Madera in California and Atera in New York, building a reputation as an accomplished chef whose expertise spans both savory and pastry. Together, they bring decades of Michelin-level experience, precision and creativity to everything they create.
Today, Paul and Monique bring that same Michelin-level precision and creativity to Tarts de Feybesse, where French technique, California seasonality and global influences shape everything from laminated pastries and breads to inventive savory offerings.
