A 40-unit franchise development agreement between Tropical Smoothie Cafe and New York City-based multi-unit operator Aurify Kingstar is set to generate a significant pipeline of commercial kitchen buildouts across Albany, Westchester County, the Bronx, and Western Connecticut, with the first location slated to open in early 2027.
The deal brings the fast-casual smoothie-and-food brand to nearly 1,800 systemwide locations across 44 states. Tropical Smoothie Cafe says it is on track to open its 1,800th cafe by end of 2026, making the Northeast expansion a next-phase growth push rather than a foothold play.
The Operator Behind the Deal
Aurify Kingstar brings considerable back-of-house infrastructure to the partnership. Co-founded by Andy Stern and John Rigos, the firm has developed, operated, or acquired more than 300 restaurants — including Five Guys, Wingstop, and Le Pain Quotidien franchises — over a 25-year run. That depth of multi-unit experience typically means a standardized equipment procurement and kitchen-build playbook, which can compress the timeline from lease signing to opening day. Jeremy Tannenbaum joins Stern and Rigos in spearheading the Tropical Smoothie Cafe development effort.
"Aurify Kingstar brings the restaurant experience, infrastructure, and proven multi-unit development capabilities we look for in growth partners," said Max Wetzel, CEO of Tropical Smoothie Cafe, LLC. For equipment dealers and kitchen design consultants working the Northeast corridor, a 40-unit commitment from a single, well-capitalized operator represents a concentrated spec opportunity across blending, refrigeration, and prep lines.
Kitchen Build Implications
Tropical Smoothie Cafe's fast-casual format centers on high-volume blending, cold beverage dispensing, and a limited hot-food menu — a footprint that leans heavily on ice-and-beverage equipment and cold-side prep-and-storage rather than heavy cooking equipment. Each new cafe buildout typically requires commercial blenders, under-counter and reach-in refrigeration, ice machines, and a streamlined prep line. Across 40 units, that translates to a substantial fleet of equipment purchases phased over the development runway.
The brand recently appointed Joe Sieve as Chief Development & Growth Officer to lead franchise growth strategy — a signal that buildout velocity is an executive-level priority. For foodservice equipment dealers and manufacturer reps concentrated in the New York metro and Connecticut markets, the Aurify Kingstar relationship is the procurement entry point worth cultivating as site selection and permitting advance through 2026 and into 2027.
