Multi-unit restaurant chains running Sightline OS now have access to Continuity AI, a reasoning engine embedded in the platform that identifies inventory supply gaps up to 12 weeks in advance, scores their severity, and prescribes an exact corrective action — eliminating the manual triage that typically consumes supply chain teams' time when a menu item goes out of stock.

The launch addresses a well-documented pain point in foodservice operations: by the time a supply chain team learns a distributor or supplier has an outage, the disruption has usually already reached the restaurant floor. Staff scramble to source substitutions and expedite orders rather than running proactive planning. Continuity AI is designed to flip that dynamic by surfacing risk before it becomes a service failure.

How the Engine Works

For every flagged inventory escalation, Continuity AI delivers five outputs. An Early Warning + Forward Scan identifies items already out of stock or trending toward depletion based on supplier lead times, and scans further into the planning horizon for additional risks hiding behind the immediate issue. An Impact Score from 0–100, paired with a Critical/High/Medium/Low label, lets teams immediately sort which open issue demands attention first. A Mitigation Outlook classifies each issue as Preventable, Partially Preventable, or Unavoidable — directing effort only where it can still change the outcome. A Next Best Action recommendation specifies a concrete step, such as placing a new purchase order or expediting one already in transit, sized to the exact case count needed. Finally, a Recommended Timing read tells teams whether that action will actually land before the gap hits.

Critically, the engine distinguishes between a temporary blip and a systemic supply gap. A stockout with an inbound replenishment order already in transit scores far lower than a prolonged outage with additional shortfalls queued behind it — converting a raw alert into a genuine prioritization tool rather than just more noise.

Bonchon Results

Sightline's case study with Bonchon illustrates the operational upside. Since deploying Sightline OS, Bonchon's system-wide weighted average distributor fill rate climbed 1.1 percentage points to reach 99.3%, while product substitutions dropped significantly across a network of more than 150 restaurants and 35 distributor operating companies. "Sightline OS has transformed how we manage our supply chain," said Suzie Tsai, CEO of Bonchon. "With greater visibility across our distribution network and stronger forecasting capabilities, our team can identify potential inventory challenges earlier, collaborate more effectively with our partners, and improve supply reliability for our franchisees."

For foodservice operators and back-of-house planners thinking about cold chain and storage reliability, the platform's logic is relevant beyond ambient grocery items — ingredient reliability directly affects whether kitchen equipment runs at planned throughput. A commissary or ghost kitchen relying on precise ingredient delivery windows to feed multiple virtual brands, for example, faces compounding losses when a single SKU goes dark. Tools that extend the warning horizon from days to weeks give those operations room to activate secondary sourcing before recipes — and the equipment schedules built around them — have to change.

Continuity AI is available immediately to existing Sightline OS customers and to prospective accounts evaluating the platform. Sightline OS counts Bonchon, Din Tai Fung, L&L Hawaiian BBQ, and Goop Kitchen among its current operator clients. The supply chain visibility challenge the platform addresses aligns with broader energy-and-sustainability pressures facing multi-unit operators, where waste from substituted or discarded ingredients adds to both cost and environmental load.
