Three months after its acquisition by Palm Ventures, AeroFarms is moving quickly: the Virginia-based vertical farm is launching Micro Arugula at Whole Foods Market nationwide and a club-sized Micro Broccoli pack exclusively at Costco, pushing its retail footprint to roughly 2,000 U.S. locations. For foodservice operators and commissary buyers, the expansion represents a broader availability of a controlled-environment produce source with food-safety credentials that are increasingly relevant in today's procurement conversations.

The New SKUs

Micro Arugula arrives in a two-ounce package priced at $4.99, timed to fall menus and available year-round. Micro Broccoli launches in a six-ounce club-pack for $7.99, exclusive to Costco members in the Northeast and Texas. AeroFarms claims the Micro Broccoli delivers 34 times more vitamin A, six times more calcium, and four times more magnesium than mature crown broccoli — figures drawn from the company's own October 2025 broccoli analysis. Both products are ready to eat without washing, a detail that matters on busy prep lines where minimizing handling steps reduces cross-contamination risk.

The extended shelf life is a meaningful back-of-house spec: AeroFarms' proprietary growing process yields an 18-to-21-day window, compared with seven days or less for typical soil-grown microgreens. That gap translates directly to lower spoilage rates and fewer emergency reorders for operators managing tight cold-chain and storage budgets.

Food Safety and the Aeroponic Advantage

Chief Executive Officer Gustavo Burger frames the launch around a food-safety argument that resonates with commercial kitchen specifiers and procurement directors. "Our indoor aeroponic system eliminates many of the key exposure points of traditional field agriculture, including soil, open-field contamination risk, and risk from dependence on unpredictable irrigation sources," Burger said. "Food safety is increasingly the deciding factor for shoppers, more so now than we've seen in over two decades of operations."

All AeroFarms microgreens are planted, harvested, and packaged at its Danville, Virginia farm without soil or pesticides, using only continuously monitored and tested purified water. Strict environmental controls govern temperature, lighting, water delivery, and airflow throughout the grow cycle, with minimal human contact at each stage. The operation is a Certified B Corporation and consistently earns top scores in independent third-party food-safety and quality certification audits — the kind of documentation that simplifies supplier vetting for large-scale foodservice buyers and commissary kitchen operators.

Scale and the Ghost-Kitchen Opportunity

The operational model behind AeroFarms — automated conveyance, robotics, and patented aeroponics at commercial scale — is precisely the type of food production automation infrastructure that ghost kitchens and high-volume commissaries are beginning to integrate into their supply sourcing. The company's Virginia farm uses, by its own account, 230 times less land and 90 percent less water than traditional field farming, metrics that align with the energy-and-sustainability goals now embedded in many foodservice operator procurement policies.

With distribution growing since the April 2026 acquisition and new retail accounts added in key geographic markets, AeroFarms is positioning microgreens as a year-round, climate-agnostic commodity rather than a specialty ingredient — a framing that should accelerate adoption across contract feeding, fast-casual, and upscale casual dining segments where nutrient density and supply-chain transparency are active purchasing criteria.
