A Vallarta Supermarkets location opening at 1470 Mountain Ave in Duarte, Calif. on October 21 represents the family-owned chain's 66th store and one of its larger back-of-house footprints to date—45,839 square feet housing scratch-production departments that rival dedicated commissary kitchens in scope and complexity.

Back-of-House at Scale

The Duarte store is built around several high-output production departments that demand significant equipment investment. The in-house Carnicería—branded as the Home of the Original Carne Asada™—handles premium marinated meat cuts, while a dedicated Cremería manages traditional cheese offerings including queso fresco and cotija. A Pescadería and in-house Cevichería process fresh seafood daily, including aguachiles prepared with freshly squeezed lime—a workflow that requires dedicated cold prep and refrigerated holding equipment central to grocery foodservice buildouts. The Panadería produces hand-decorated cakes and pan dulce alongside warm corn and flour tortillas crafted on-site, requiring commercial ovens, proofers, and tortilla-making lines operating throughout the day.

New Sushi Concept Debuts

The Duarte opening also marks the debut of SushiOro, Vallarta's new in-store sushi concept developed entirely by its in-house culinary team. SushiOro launches with six signature sauces—ranging from sweet and zesty to bold and spicy—with select sauces paired to core rolls and all six available à la carte. In-store sushi programs require dedicated refrigerated display cases, specialty prep surfaces, and temperature-controlled ingredient storage, adding another layer of cold-side and prep equipment to an already complex kitchen suite.

Commissary-Style Output, Retail Setting

La Cocina, the store's hot foods department, plates ready-to-eat meals inspired by Mexico and Central America—tortas de jamón, rice and refried beans, and tacos—alongside a made-to-order guacamole station and an aguas frescas juice bar served from traditional vitroleros. The combination of hot-hold, cold prep, and made-to-order stations in a single retail environment mirrors the equipment density seen in ghost kitchen and commissary buildouts, where throughput and food-safety compliance drive specification decisions. Operators and foodservice consultants designing similar scratch-production retail environments will recognize the ventilation, refrigeration, and cooking equipment load implied by Vallarta's department mix.

The new store creates 200 jobs across department and leadership roles, and Vallarta is contributing $10,000 to five local schools and charitable organizations as part of the grand opening. The chain now operates 66 locations across California and Arizona with more than 9,000 team members, and the Duarte store adds delivery fulfillment through DoorDash, Uber Eats, and Instacart—placing additional demand on hot-hold and packaging workflows at the back of house.
