The Cordish Companies and Bruce Smith Enterprise have reached the structural topping-out milestone on Live! Casino & Hotel Virginia, a 445,000-plus-square-foot resort in Petersburg set to open by the end of 2027 — and the back-of-house scope of the project is significant. The destination will house 20 restaurant, bar, and entertainment-dining venues, representing one of the more intensive foodservice buildouts in Virginia's history.

The F&B Footprint

Three anchor dining concepts are already confirmed. Sports & Social, the group's flagship sports-bar concept spanning 8,000 square feet, will anchor the entertainment offer with a centerpiece LED screen measuring 82 feet wide by 14 feet tall — a format that demands high-volume bar service and made-from-scratch kitchen production simultaneously. The Prime Rib®, a fine-dining steakhouse brand recognized by Wine Spectator and consistently rated among the top casino restaurants nationally, brings tableside service volumes and specialized protein-cookery requirements. Luk Fu, the group's Pan-Asian concept — which earned "Best Asian and Best Sushi" honors at Casino Player Magazine's 2025 Best of Dining & Nightlife Awards — adds wok stations, sushi prep lines, and noodle-service infrastructure to the equipment mix. Both Luk Fu and The Prime Rib interiors are being designed by Beth Bloom Designs, a national hospitality design firm, underscoring the level of finish expected throughout.

For equipment specifiers and foodservice design consultants, the 20-venue program across a single campus means extensive coordination of cooking suites, cold storage, ice systems, and warewashing infrastructure. Large casino-resort buildouts of this scale typically require multiple dedicated commissary or prep areas, blast-chilling capacity for banquet production, and high-throughput warewashing systems capable of supporting simultaneous peak service across several outlets. The roughly 70,000-square-foot multi-purpose Event Center adds banquet and convention catering demands on top of the restaurant load — a combination that often drives specification of rack conveyor or flight-type warewashers and large-format holding and retherm equipment.

Supply Chain and Local Vendor Opportunity

The development team has signaled an active local-procurement posture, hosting a Local Contractor & Vendor Fair on October 14 at the Petersburg Public Library. Food and beverage supply is listed explicitly among the procurement categories, meaning regional foodservice distributors, smallwares suppliers, and equipment dealers could have a path to contract opportunities. The Cordish Companies and Bruce Smith Enterprise are seeking MBE/WBE and veteran-owned vendors as part of their supplier diversity commitments.

The project is projected to generate $2.8 billion in regional economic stimulus over its first decade and $201 million in annual economic benefits post-opening. Those figures reflect steady-state operational spending that will include ongoing equipment service, parts, and consumables — a long-tail revenue stream for dealers and service agents who establish early relationships on the buildout. Operators and foodservice design consultants tracking large-scale casino-resort kitchen programs should note that the temporary Live! Casino Virginia has already been operating on the same Petersburg site since January, giving the project team operational data to inform final equipment specification.

With casino-resort foodservice programs increasingly benchmarked against urban fine-dining standards — and concepts like Sports & Social demanding AV-integrated, high-throughput bar environments — the cooking equipment and refrigeration specification scope at Live! Casino & Hotel Virginia will be closely watched by the industry as the 2027 opening approaches. Additional dining concepts and local hospitality partnerships are expected to be announced through the lead-up to opening.
